Coming to some of the gripes we had with this unit, it does take a while building up steam. At high, expect at least 15 to 20 minutes for the steam to build up sufficient pressure. Thankfully, it cooks much faster in less than 5 minutes so your total cooking time will vary from 15 to 25 minutes at most. However, depending on the recipe you may spend a few minutes more in the kitchen than with other pressure cookers. By the way, the red steam release valve tends to jam causing an immediate flush of steam. Before every use, make sure the release valve is free. If not just tap at it till it jars free. These are just minor inconveniences and nothing more. Speaking in terms of usability, design and reliability, this is an amazing piece of modern engineering from Cuisinart.
